Eat like a Roman with Maria Pasquale, author of The Eternal City: Belinda Jackson
Australian author Maria Pasquale first visited Rome as a child with her Italian parents in the 1980s, and has lived in Rome for 12 years. Her latest book, The Eternal City: Recipes and stories from Rome, lifts the (saucepan) lid on what’s cooking in Rome, from its historic Jewish cuisine to the nose-to-tail recipes that leave nothing wasted.
Maria chats with Belinda Jackson about the classic dish to order when in Rome, where to get the best gelato in town and how the Aussie version of carbonara blew her Italian mind.
